Crocodile Skewers

Ingredients:
  • 500g crocodile meat, cut into 2cm cubes
  • 150ml fresh orange juice
  • 1 tablespoon ground lemon myrtle
  • Pepper
  • Olive oil
  • 2 red onions, cut into 2cm pieces
  • 1 red capsicum, cut into 2cm pieces
  • 1 green capsicum, cut into 2cm pieces
  • Bamboo skewers
Method:
  1. MARINATE crocodile in orange juice for 2 hours or overnight, then drain.
  2. ROLL the crocodile in a little olive oil, lemon myrtle and pepper.
  3. THREAD crocodile, onion, and capsicum alternately on skewers.
  4. BBQ skewers until cooked through and serve with salad of your choice.
