Mango Chow

Ingredients:
  • 2 large mangoes, sliced
  • ½ cup coriander, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 red chilli, thinly sliced
  • 1 lime, juiced
Method:
  1. COMBINE the mango, coriander, garlic and chilli in a bowl.
  2. ADD the lime juice and stir until well combined.
  3. CHILL in the fridge until ready to serve, to allow the flavours to marinate.

This recipe is featured as part of the 2023 QCWA Country of Study – Trinidad and Tobago. This popular snack or breakfast food is commonly made using mango; however, this can be substituted for pineapple or even green apple. It is particularly refreshing for hot climates with its sweet and tangy flavours. It would also make a great accompaniment to fish or grilled meats. Traditionally a spicy dish, you can reduce or increase the amount of chilli to suit your preference.
