Tomato Chutney

Ingredients:
  • 2 teaspoons olive oil
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 400g can crushed tomatoes
  • ¼ cup raisins or sultanas
  • ½ teaspoon mixed spice or allspice
  • 1 tablespoon balsamic vinegar
Method:
  1. HEAT oil in a saucepan over medium heat.
  2. ADD onion and cook for 3-4 minutes or until soft.
  3. ADD garlic and cook for 1 minute.
  4. POUR in tomatoes, raisins or sultanas, spice and balsamic vinegar.
  5. BRING to the boil.
  6. REDUCE heat to medium-low and simmer, uncovered, for 40 minutes or until chutney is thick.
What's Great About It:

This tomato chutney is a great alterative to store-bought varieties. The sultanas add sweetness without the need for added sugar, and the balsamic vinegar adds a great depth of flavour. It pairs perfectly with our healthy sausage rolls, potato and carrot rosti, or our corn, zucchini and chickpea fritters.
