Millie’s Savoury Slice

Ingredients:
  • 2 cups carrot, grated
  • 1 cup zucchini, grated
  • 1 onion, chopped
  • 3 bacon rashers, trimmed of fat, finely chopped
  • 1 cup cheddar cheese, reduced fat, grated
  • 1 cup self-raising flour
  • 5 eggs, beaten
  • ½ cup extra virgin olive oil
  • Pepper, to taste
  • 2 tablespoons parmesan cheese, grated
Method:
  1. PREHEAT oven to 180oC. Line baking tray with baking paper.
  2. COMBINE all ingredients in large bowl, mix well.
  3. SPREAD mixture into prepared pan and sprinkle with grated parmesan cheese.
  4. BAKE for 30 minutes or until set.
  5. SERVE with side salad.

This is a favourite of one of QCWA’s longest standing members, so we had to name it after her! This makes a great weekend breakfast or mid-week lunch to help get you to your five serves of veggies. Try substituting the vegetables for whatever you have on hand.
