Pesto Pasta Salad

Ingredients:
- ¼ cup pine nuts or cashews
- 2 cups baby spinach
- 1 cup basil leaves
- 2 cloves garlic
- ¼ cup extra virgin olive oil
- ¼ cup parmesan cheese, grated
- ¼ teaspoon black pepper, freshly cracked
Salad:
- 200g cherry tomatoes, halved
- ¼ red onion, finely diced
- 1 cup baby spinach
- 200g wholemeal pasta, cooked
- 100g feta (optional)
Method:
- TOAST pine nuts in a fry pan over a low heat for 2-3 minutes or until golden.
- ADD pine nuts, spinach, basil and garlic into food processor and blitz.
- ADD the oil gradually until just combined and then add the parmesan and blitz to combine
- MIX the salad ingredients together in a bowl and stir through the pesto.

A great recipe to feed a crowd, this salad is packed full of flavour with the home-made pesto dressing. It offers lots of vegetables in each serve, as well as a good amount of fibre from the wholemeal pasta.
