Tomato Chutney

Ingredients:
- 2 teaspoons olive oil
- 1 brown onion, finely chopped
- 3 garlic cloves, crushed
- 400g can crushed tomatoes
- ¼ cup raisins or sultanas
- ½ teaspoon mixed spice or allspice
- 1 tablespoon balsamic vinegar
Method:
- HEAT oil in a saucepan over medium heat.
- ADD onion and cook for 3-4 minutes or until soft.
- ADD garlic and cook for 1 minute.
- POUR in tomatoes, raisins or sultanas, spice and balsamic vinegar.
- BRING to the boil.
- REDUCE heat to medium-low and simmer, uncovered, for 40 minutes or until chutney is thick.
What's Great About It:
This tomato chutney is a great alterative to store-bought varieties. The sultanas add sweetness without the need for added sugar, and the balsamic vinegar adds a great depth of flavour. It pairs perfectly with our healthy sausage rolls, potato and carrot rosti, or our corn, zucchini and chickpea fritters.
