Chicken Fajitas

Ingredients:
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced or 1 teaspoon garlic powder
  • 2 teaspoons ground cumin
  • 1 teaspoon ground chilli powder
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of one lime
  • 500g skinless chicken thighs, fat trimmed, sliced into 1cm strips
  • 3 large capsicums (different colours), deseeded and sliced
  • 1 large onion, sliced into half-moons
  • 1 large avocado, sliced
  • Fresh coriander, leaves only, to serve
  • 8-12 small flour or corn tortillas
Method:
  1. COMBINE 2 tablespoons oil, garlic, cumin, chilli, paprika, oregano, salt and pepper and lime juice in a shallow bowl.
  2. ADD chicken strips and mix to coat. Marinate for at least 30 minutes. Drain well.
  3. HEAT a large pan over medium high heat. Add remaining oil.
  4. ADD chicken strips to frying pan and cook through, approximately 5 minutes, stirring occasionally.
  5. REMOVE chicken and transfer to a plate. Loosely cover with foil.
  6. USING the same pan with the chicken cooking juices retained, add the capsicums and onion and cook until soft, about 5-10 minutes.
  7. ADD chicken back to pan and cook for further 1-2 minutes or until warmed through.
  8. SERVE the chicken mix, sliced avocado, coriander and warmed tortillas on a platter so that everyone can build their own tortilla with their desired toppings.
