Strawberry, Cucumber, Watermelon & Feta Salad

Ingredients:
  • 2 cups watermelon, cubed or balled
  • 1 cup strawberries, hulled and halved or quartered
  • 1 cup cucumber, thinly sliced
  • ½ cup feta cheese, crumbled or cubed
  • ¼ cup fresh basil leaves, torn or chiffonade

Dressing:

  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • Salt and black pepper, to taste
Method:
  1. ADD watermelon, strawberry, cucumber, feta cheese and basil to a bowl and gently toss together.
  2. COMBINE dressing ingredients in a small bowl or jar with lid and shake well.
  3. DRIZZLE dressing over salad and toss before serving.
What's Great About It:

This dish is a delicious, light and fruity summer salad! It is great served on its own or as a side during festive celebrations. Easily add in more greens such as spinach to bulk it out and serve more people. This salad holds well even after the dressing has been added, so be sure to keep leftover for the next day.
