Raspberry, Cherry and Watermelon Pops

Ingredients:
  • ¾ cup (165g) caster sugar
  • 1 bunch mint, whole
  • 1 lime finely zested and juiced
  • 500g seedless watermelon flesh, skinned and roughly chopped
  • 1 cup (400g) frozen cherries, pitted
  • 2 x 125g punnets raspberries
Method:
  1. COMBINE sugar and ¾ cup (180ml) boiling water in a heatproof jug and whisk until sugar dissolves.
  2. STIR through the lime zest then gently submerge the mint in the sugar syrup.
  3. CHILL until sugar syrup has cooled completely then remove the mint and discard.
  4. BLITZ raspberries, cherries and watermelon with the lime juice in a food processor until smooth.
  5. STRAIN through a fine sieve into a large jug, discarding any solids.
  6. STIR in the sugar syrup. Divide mixture among 10 x 100ml-capacity ice-pop moulds.
  7. FREEZE for 2 hours or until starting to set. Insert paddle pop sticks in the centre of the moulds, then freeze for a further 5 hours or until completely frozen.

These popsicles are the perfect summer treat to satisfy your sweet tooth while still providing you with almost a whole serve of fruit! Experiment with other fruit combinations to switch up the flavour – mango, strawberries or frozen pineapple chunks would all work great!
