Melon Salsa

Ingredients:
  • 2 cups melon (honeydew or rockmelon), finely diced
  • ½ continental cucumber, finely diced
  • ½ small red onion, finely diced
  • 1 clove garlic, minced
  • 1 lime, zested and juiced
  • 1 chilli, finely chopped (optional)
  • ½ cup fresh coriander, chopped
  • Salt and pepper, to taste
Method:
  1. COMBINE the diced melon, cucumber, and red onion in a medium bowl.
  2. ADD the garlic, lime zest and juice, chilli and coriander, and stir through the salsa.
  3. SEASON with salt and pepper to taste.
  4. REFRIGERATE for 30 minutes before serving.

This easy salsa recipe is perfect for when melons are in season, and a great side dish to serve for a festive celebration or summer meal. With crisp, fresh flavours, this salsa is a perfect accompaniment to grilled fish or chicken, on tacos or with baked tortilla strips. Adjust the heat by adding more or less chilli and removing the seeds from the chilli before chopping.
