Mixed Berry Crumble Cup

Ingredients:
  • ¾ cup mixed frozen berries, cut down any large pieces
  • ¼ teaspoon cinnamon
  • 1 teaspoon sugar
  • ½ teaspoon plain flour or cornstarch

Topping:

  • 1 tablespoon wholemeal flour
  • 1 tablespoon rolled oats
  • ½ teaspoon sugar
  • 1 tablespoon margarine, melted
Method:
  1. PREHEAT oven to 200oC.
  2. COMBINE berries, cinnamon, 1 teaspoon of sugar and plain flour in a small bowl and mix until berries are well coated.
  3. TRANSFER berry mixture to a ramekin.
  4. ADD topping ingredients to a small bowl and mix well until it resembles crumbs.
  5. TOP berry mixture with oats.
  6. BAKE in the oven for 15-20 minutes until golden brown and berries are bubbling.
  7. OTPIONAL: serve with a dollop of yoghurt on top.

This berry crumble cup is perfect for when you’re craving a little something sweet! It’s made largely from pantry staples and provides you with almost a whole serve of fruit. You can also whip this quick dessert up in the air fryer – simply reduce the heat to 180oC and the cook time to 12-15 minutes.
