Chicken Fajitas

Ingredients:
- 3 tablespoons olive oil
- 2 garlic cloves, minced or 1 teaspoon garlic powder
- 2 teaspoons ground cumin
- 1 teaspoon ground chilli powder
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- Salt and pepper to taste
- Juice of one lime
- 500g skinless chicken thighs, fat trimmed, sliced into 1cm strips
- 3 large capsicums (different colours), deseeded and sliced
- 1 large onion, sliced into half-moons
- 1 large avocado, sliced
- Fresh coriander, leaves only, to serve
- 8-12 small flour or corn tortillas
Method:
- COMBINE 2 tablespoons oil, garlic, cumin, chilli, paprika, oregano, salt and pepper and lime juice in a shallow bowl.
- ADD chicken strips and mix to coat. Marinate for at least 30 minutes. Drain well.
- HEAT a large pan over medium high heat. Add remaining oil.
- ADD chicken strips to frying pan and cook through, approximately 5 minutes, stirring occasionally.
- REMOVE chicken and transfer to a plate. Loosely cover with foil.
- USING the same pan with the chicken cooking juices retained, add the capsicums and onion and cook until soft, about 5-10 minutes.
- ADD chicken back to pan and cook for further 1-2 minutes or until warmed through.
- SERVE the chicken mix, sliced avocado, coriander and warmed tortillas on a platter so that everyone can build their own tortilla with their desired toppings.
