Flourless Banana Pancakes

Ingredients:
  • 2 ripe medium bananas, mashed
  • 3 large eggs, lightly beaten
  • 1 tablespoon extra virgin olive oil 

Toppings:

  • 1 cup of berries (any variety, fresh or frozen and thawed)
  • ½ cup reduced fat yoghurt or reduced fat lactose free yoghurt
Method:
  1. MASH bananas in a large bowl.
  2. WHISK eggs and add to mashed banana.
  3. HEAT oil in frying pan and cook pancakes for 2-3 minutes each side.
  4. SERVE with berries and yoghurt.
What's Great About It:

This gluten free pancake recipe is super quick and easy and has a deliciously sweet flavour from the ripe bananas, without the need for any added sugar! You can choose any of your favourite fruits as toppings and can easily make this lactose free by opting for a lactose free yoghurt.
