Lemon and Hazelnut Pesto

Ingredients:
- 1 tablespoon pine nuts, toasted
- 2 tablespoons hazelnuts, toasted
- 1 cup fresh parsley
- 1 cup fresh basil
- 2 cloves garlic
- ¼ cup parmesan cheese, grated
- ¼ cup light extra virgin olive oil
- ½ lemon, juiced
Method:
- ADD all the ingredients except the oil and lemon juice to a food processor.
- BLITZ for a few seconds before slowly drizzling the oil in while blending on low speed.
- ADD half of the lemon juice and blitz.
- TASTE and add more lemon juice if desired.
What's Great About It:
Pesto is delicious on pasta, bread or even as a marinade. It is a great way to use up leftover herbs and flavour food without adding salt. This pesto has a zesty flavour and uses hazelnuts for something a bit different! Stir through some yoghurt for a delicious dressing.
