Potato and Carrot Rosti

Ingredients:
  • 2 large potatoes, grated
  • 3 large carrots, grated
  • 2 eggs, beaten
  • 2 tablespoons olive oil
  • 1 tablespoon flat leaf parsley, finely chopped
Method:
  1. SQUEEZE excess liquid from the grated potato and carrot and combine in large bowl.
  2. ADD egg to vegetable mixture and stir to combine.
  3. HEAT oil in a frypan over medium-low heat.
  4. POUR batter into pan and fry for 5 minutes on each side, until golden brown.
  5. SERVE with a sprinkle with parsley.
What's Great About It:

This recipe is delicious served with our tomato chutney and a dollop of yoghurt, or with a poached egg on top! If making for larger groups, try using a ¼ cup measure to pour batter into small serves rather than one large rosti.
