Method:
- COMBINE sugar and ¾ cup (180ml) boiling water in a heatproof jug and whisk until sugar dissolves.
- STIR through the lime zest then gently submerge the mint in the sugar syrup.
- CHILL until sugar syrup has cooled completely then remove the mint and discard.
- BLITZ raspberries, cherries and watermelon with the lime juice in a food processor until smooth.
- STRAIN through a fine sieve into a large jug, discarding any solids.
- STIR in the sugar syrup. Divide mixture among 10 x 100ml-capacity ice-pop moulds.
- FREEZE for 2 hours or until starting to set. Insert paddle pop sticks in the centre of the moulds, then freeze for a further 5 hours or until completely frozen.
What's Great About It:
These popsicles are the perfect summer treat to satisfy your sweet tooth while still providing you with almost a whole serve of fruit! Experiment with other fruit combinations to switch up the flavour – mango, strawberries or frozen pineapple chunks would all work great!
