Smashed Pumpkin Bruschetta

Ingredients:
  • 2 cups roasted pumpkin
  • 1 tablespoon pesto (store bought or homemade)
  • 4 slices sourdough toast
  • 260g jar chargrilled capsicum, drained
  • 50g reduced fat feta
  • 8 kalamata olives, halved
  • 1 tablespoon roasted pumpkin seeds
  • Pepper, to taste
  • 1 teaspoon balsamic vinegar
Method:
  1. HEAT pumpkin in the microwave for one minute.
  2. SPREAD pesto on each slice of toast.
  3. MASH pumpkin onto toast.
  4. ADD capsicum, feta, olives, pumpkin seeds and pepper.
  5. DRIZZLE with balsamic vinegar and serve.
What's Great About It:

This is a delicious and filling way to get extra vegetables in at breakfast. Top with avocado or egg for a healthy fat or protein boost at breakfast.
