Sunshine Fruit Salad

Ingredients:
- 1 cup strawberries, roughly chopped
- 1 small pineapple, skin removed and chopped
- ½ small pawpaw, peeled and chopped
- 1 mango, peeled and sliced
- 1 tablespoon ginger, grated
- 2 oranges, juiced
- 2 passionfruits, halved and pulp removed
- 2 cup natural yoghurt, reduced fat
Method:
- COMBINE strawberries, pineapple, pawpaw and mango in a large bowl.
- MIX ginger, orange juice and passionfruit pulp in a small jug and drizzle over fruit.
- SET aside in the refrigerator until cool.
- SERVE with yoghurt.
What's Great About It:
This recipe contains a selection of fresh fruit grown on the Sunshine Coast, including strawberries, pineapple, pawpaw and passionfruit. These can easily be substituted for local, seasonal fruit in your area. Dragon fruit, carambolas and finger limes go particularly well!
